Green Shakshouka

Hi!

I recently added a recipe for Shakshouka with Spinach and Cheddar and since then I have been eating it almost every day. I decided to try to change the color of this dish a bit and the result was completely Green Shakshouka.
I’m sure you’ll like it just like the previous one.

Of course, you can modify the recipe, enrich it or completely replace the ingredients.

 

Ingredients:

  • 3 eggs
  • 3 tablespoons of olive oil
  • 1 small zucchini or 1/2 large zucchini
  • 1/2 small red onion
  • 1 clove of garlic
  • 2 handfuls of spinach
  • a few leaves of fresh basil
  • 1 tablespoon of any sprouts, I used sunflower seeds
  • a pinch of salt, pepper, cumin and chilli

Instructions:

Wash the zucchini thoroughly and then grate it on a coarse grater. Cut the onion into small cubes, chop the garlic.

Heat the olive oil in a pan over medium heat. Add the onion and fry for 2-3 minutes. Add the garlic, fry for another minute and add the zucchini. Mix everything and fry for another minute. Add spinach, a pinch of salt, pepper, cumin and chilli, mix again and make three wells in the resulting sauce. We crack one egg into each.

Cover the pan with a lid and cook without stirring for about 6 minutes or until the egg whites are set.

Sprinkle the finished dish with sprouts and fresh basil leaves. Additionally, we can sprinkle the whole thing with your favorite cheese, e.g. Feta cheese or Parmesan.
