Chicken cutlets baked with cheese and tomato with blanched lettuce and vegetables

Today I have another colorful proposal for you in Lstopada. Quick and everyone certainly likes this type of meat.
Chicken cutlets baked with cheese and tomato with blanched lettuce and vegetables. Sounds delicious and tasty

Ingredients:

  • 2 chicken breasts (good quality)
  • 1 egg (or more depending)
  • 5-10 tablespoons of almond flour / you can use other flour.
  • 1 small red onion.
  • Chives
  • Salt, pepper, red pepper, fresh basil, oregano
  • 1-2 large tomatoes
  • Cheddar cheese
  • Mix salad
  • Brussels sprouts (optional, as many as you want)
  • Zucchini (optional, as much as you want)
  • Olive oil

Instructions:

Wash and dry the chicken. Place the diced chicken, egg, almond flour in a blender – mix everything until smooth. Add diced red onion, chives, spices and herbs and two tablespoons of 3 tablespoons of cheddar cheese (if the mixture is too thin, add more cheese or flour) (if it is too thick, you can add an egg – but make sure it is not too thick) Form cutlets and place half a slice of tomato on a baking tray lined with parchment paper, sprinkle with pepper and cheddar cheese. Bake at 180 degrees for 20 minutes (check)

In the meantime, heat a frying pan and 2 tablespoons of olive oil, fry the zucchini in half and half the brussels sprouts, then pour a small cup of espresso into the water, simmer covered until soft (check to make sure they don’t fall apart).

Remove the pan from the zucchini and Brussels sprouts, add the salad mix to the zucchini. and mix gently, transfer onto a plate, place the cutlets and sprinkle with chives.

You can serve with any dip.
