Zucchini Omelette – GLUTEN FREE

Today, I have a recipe for you for a delicious, healthy, and simple breakfast – baked Zucchini Omelette with various toppings. This dish is perfect for lazy weekend mornings when you want to eat something nutritious yet light. The combination of tender zucchini, creamy cheese, and your favorite toppings creates a unique flavor that will surely be enjoyed by the whole family. There’s nothing stopping you from enjoying this as a lunch meal as well. What’s more, preparing this omelette won’t take much of your time, and the end result is truly delightful. Ingredients:

  • 2 eggs (from happy hens)
  • 1 medium zucchini
  • cheddar or mozzarella cheese (I used lactose-free), salt, pepper, fresh basil
  • 2 medium tomatoes
  • half a green bell pepper (any kind)
  • red onion
  • ham good quality (can be grilled turkey, chicken, ground beef, ground turkey, salmon, tuna) or without meat
  • fresh spins,
  • favorite sprouts
  • favorite sauce if you like.

Instructions:

Grate the zucchini and squeeze out the water, add eggs, salt, pepper, grated cheese, and fresh basil.

Mix everything together and pour it onto baking paper and sprinkle generously with cheese. You can do this in a round baking pan or a rectangular one (I used a tart pan and made it on a small flat baking tray).

Bake for 15 minutes at 200 degrees Celsius. In the meantime, lightly blanch the tomatoes, bell pepper, and onion in a pan, and at the end add the spinach. When the a la pizza is done, place the toppings and your favorite meat on it, sprinkle with cheese, and put it back in the oven for 5-10 minutes until the cheese melts nicely.

Transfer to a plate, sprinkle with sprouts or salad, and add your favorite sauce.
