Apple Cottage Cheese Pancakes / KETO – Low Carb

Hi!

Cottage Cheese Pancakes with Apple in the Keto version – definitely yes. This tasty and very simple recipe resembles and tastes like traditional apple pancakes – or even better. Served with your favorite cream or alone, they combine deliciously. The best thing is that you can add any fruit and they will taste just as great.

Ingredients:

  • 150g of fatty cottage cheese
  • 2 eggs
  • 1 flat teaspoon of coconut flour
  • 1/2 teaspoon gluten-free baking powder
  • 1 tablespoon of erythritol
  • 1 teaspoon of butter
  • 1 green large apple / or 2 smaller ones
  • pancake/fried egg pan (or regular)

Instructions:

Place the cottage cheese in a bowl, add the eggs and blend it with a blender until smooth. Don’t worry about small lumps of cheese in the mixture – they are welcome. 😉

Then add coconut flour, your chosen sugar substitute and baking powder. Mix thoroughly, add the grated apple and mix gently. If the mixture is too thick, add more flour. If you can add almond milk (or whatever milk you have) to the dough, you can also add an egg, but then check whether you need to add more flour.

Grease the selected pan with butter.

If you are using a pancake pan…
Place 1/4 of the cheese mixture into each of the four molds. When the bottom is golden brown and the top is no longer liquid, gently lift the KETO cottage cheese pancakes with a silicone spatula and turn them over. Fry for a while.

If you use a traditional frying pan…
Fry slightly smaller pancakes (it will be more difficult to keep their shape, they are delicate). Put a spoonful of the cheese mixture into the pan and form a small pancake (approximately 7-8 smaller keto pancakes will be created). When the cottage cheese cake is golden brown, gently pry it out with a silicone spatula and turn it over to the other side. Fry for a while.

*Serve with your favorite additions, cream, chocolate and fruit.

*You can also replace the apple with another fruit and it will also be delicious.
