Shakshouka with Spinach and Cheddar

It’s been a while since there was any breakfast option, so today I have something quick, tasty and nutritious – Shakshouka with Spinach and Cheddar.

As you already know, I prefer nutritious meals, sweet breakfast, but in my opinion this is not a good option because you will soon be hungry and it will only increase your insulin and make you sleepy. That’s why I think that such a breakfast will be great and will fill your belly for longer.

Of course, you can modify the recipe, enrich it or completely replace the ingredients.

Ingredients:

  • 2 eggs
  • 2 large tomatoes
  • 2 cloves of garlic
  • a handful of fresh spinach
  • a handful of fresh basil
  • a few balls of mozzarella
  • spices: a teaspoon of chili and smoked paprika, salt, pepper
  • olive oil, butter

Instructions:

Cut the washed tomatoes into cubes and stew in olive oil until soft (approx. 5 minutes).

If the tomatoes did not have enough juice, add some water so that there is some sauce in the pan.

Add sliced garlic and peppers (chili and sweet). Mix everything together, add salt and pepper.
Add a small amount of butter to taste and add a handful of spinach and fresh basil.
As soon as the spinach is cooked, add the eggs and mozzarella balls. Season everything again with salt and pepper.

At this stage, you can use a lid, which will shorten the preparation time to approximately 4-5 minutes.
It is best to serve the dish in the pan in which it was prepared.
