Zucchini waffles
Zucchini waffles are a delicious and healthy alternative to traditional waffles. Crispy on the outside, soft on the inside, and full of vegetable flavor – they’re perfect for breakfast, lunch, or a light dinner. Serve them with your favorite savory toppings – they always taste amazing
INGREDIENTS:
- 2 small zucchinis or 1 larger
- 200g yellow cheese LF / VEGAN
- 2 eggs
- ½ cup almond milk / any other will work
- 100g almond / lupine flour / Gluten Free
- 2 teaspoons GF baking powder
- ½ teaspoon baking soda
- 1 tablespoon extra virgin olive oil
- 1 teaspoon chopped fresh dill
- ½ teaspoon salt
INSTRUCTION:
Grate the zucchinis on a coarse grater. Drain the water and set aside. Grate the cheese as well. Set aside.
Crack the eggs into a bowl, pour in the milk, add the flour, baking powder, baking soda, salt and oil. Mix the ingredients and then add the drained zucchini, cheese and dill. Mix. The dough should be quite thick, if necessary add a little more flour. Place the dough on a heated waffle iron and bake.
