Baked Stuffed Sweet Potatoes with Avocado Paste!

Ingredients

  • 3-4 sweet potatoes
  • 1 ripe avocado
  • 1/4 red onion
  • juice from 1/2 small lime
  • a handful of fresh coriander
  • 5 sun-dried tomatoes in oil
  • a handful of roasted hazelnuts
  • fresh chilli, as desired
  • 1/4 fresh red pepper

Instructions

Wash the sweet potatoes under water. Prick them with a fork – quite intensively. Put in a preheated oven, bake until soft on a baking sheet, I baked at 190 degrees C.

Prepare a sweet potato paste from the remaining ingredients, season with salt, pepper and lime juice. Sprinkle with hazelnuts, roasted intensively in a dry pan, sprinkle with fresh coriander.
