Lentil Pancakes with Tofu Paste

Ingredients / 6 pancakes

  • 1/2 cup dry red lentils
  • 1 cup water
  • pinch of salt
  • fresh herbs optional
  • olive oil

Ingredients for the breakfast filling:

  • 150 g natural tofu
  • 2 tablespoons vegan mayonnaise
  • a pinch of turmeric
  • a few drops of lemon juice
  • chives
  • 1 fresh cucumber
  • crunchy lettuce leaves
  • sprouts
  • salt and pepper to taste
  • paprika, radishes, avocado

Instructions / 6 pancakes

Pour a glass of water over the lentils and leave to soak for at least 2 hours.

After this time, transfer the whole thing to a blender and blend until smooth (you can also use a hand blender).

Season with a pinch of salt and fry thin pancakes on a heated pan, in a small amount of olive oil The mass should be slightly fluffy.

Spread each pancake on the pan with a spoon and fry for about 1.5 minutes on each side. They should come away from the pan without any problem.

Breakfast Filling:

Cut the tofu into small cubes or mash it with a fork.
Add mayonnaise, lemon juice, chopped chives, turmeric and season with salt and pepper to taste.

Place a lettuce leaf, sliced ​​cucumbers and tofu paste on the prepared pancake.
