Zucchini Frittata with Suny Said Egg & Homemade Ham

Ingredients:
- 2 eggs – free range
- 1 medium zucchini – peeled
- Any ham – (I used a homemade recipe here)
- 1 large tomato – (I used one from the garden and peeled it)
- Fresh basil, salt, black pepper
Instructions:
Peel the zucchini, grate and drain the water.
Beat 2 eggs in a bowl, add the zucchini, salt, black pepper and a few leaves of chopped basil. Mix everything together and pour into a baking tin with baking paper (I used a tart tin).
Bake for 15 minutes at 200 degrees. After this time, add any ham, tomatoes and beat in 2 more eggs. Bake for about 10 minutes or until the whites set.
Sprinkle with basil and you can serve with your favorite sauce.
