Zucchini and Onion Pizza

Everyone likes Pizza, it’s a perfect combination of flavors.

Dough, sauce, cheese and basil. However, ideas for healthy versions of this dish are running out like a marathon.

I have a completely different pizza for you – I thought we could call it that, or maybe it would be better to make it a breakfast option or a quick lunch in the form of a pizza-style pancake.

 

Ingredients:

  • 2 Zucchinis
  • 1 Onion
  • 1.5 Red onion
  • 2 Eggs
  • 200g Almond flour
  • 50g -100g Cheddar/mocarella cheese
  • Salt, pepper, red pepper or other additions to your taste.
  • Soft cheese – whatever you like (philadelphia cheese)
  • Package of smoked salmon ( good quality )
  • Dill/chives to taste

Instructions:

Wash and grate the zucchini, sprinkle with salt and set aside for 10 minutes, then drain the water well.
Peel the onions and cut them into slices.
In a bowl, combine zucchini, onion, egg, flour, cheese and spices.

A smooth consistency must be created. Place on paper and shape into a pizza shape. Bake for about 30 minutes at 180 degrees (check to make sure it doesn’t burn)

Remove from the oven, cool and spread the soft cheese, top with smoked salmon and sprinkle with dill and seeds.
