Stifado Greek Beef Stew with red onion and tomato sauce

 

Stifado, the traditional Greek beef stew, is a true celebration of Mediterranean flavors. This hearty dish combines tender pieces of beef slow-cooked with sweet onions, tomatoes, and a blend of aromatic spices like cinnamon and cloves. Ingredients:

  • 1.5 kg beef (entrecote)
  • olive oil
  • 300 g red onion
  • 2 cloves garlic
  • 170 ml dry red wine (optional)
  • 0.5 teaspoon ground
  • 4 cloves
  • 2 bay leaves
  • 600 g tomato passata (I used homemade, you can find the recipe here)
  • 250 ml broth or water
  • 0.5 teaspoon each of salt and pepper
  • parsley for garnish

Instructions:

Cut the beef into approx. 4 cm pieces. Heat a large pan with a thick bottom (e.g. cast iron) and gradually fry the meat in olive oil until golden brown. Set aside the fried pieces and transfer to a pressure cooker for 30 minutes and pour in the lubion and the sauce that was made from frying. (If you don’t have it, transfer to a tall pot and simmer for about 2 hours)
Peel and fry the red onion, add the garlic, wine, the rest of the spices and simmer for about 5 minutes. Finally, add the tomato paste and simmer gently for about 10 minutes – stir all the time.
When the meat is soft (it should literally fall apart), pour the sauce over the meat and serve as desired.
