I’d like to share a recipe for delicious and impressive Pancake -Cheese rolls with chicken & bacon

Ingredients:
- 6 large slices of mozzarella cheese (I used lactose-free)
- 1 1/2 cooked chicken (shredded)
- 1/4 cooked bacon (you can fry it if you want)
- 1 red onion (finely chopped)
- 1 green onion (finely chopped)
Instructions:
In a bowl, combine the chicken, cooked bacon, your favourite dressing (I used garlic on coconut cream) and the red and green onions. Set aside
Preheat the oven to 190 and line a large baking sheet with a silicone baking mat (paper won’t work).
Place the pancakes on the silicone mat and then the mozzarella slices.
Bake for 5-7 minutes until the cheese is bubbling and the edges are brown.
Remove from the oven and leave to cool for a minute (no longer than you can roll them up).
Add the filling and roll them up tightly. Drizzle with the dressing and serve with your favourite salad
