Juicy Chicken with Zucchini, Spinach and Dried Tomatoes
Ingredients:
- approx. 550 g chicken fillets
- 2 cloves garlic
- 1 teaspoon dried oregano
- 1 teaspoon curry spice
- 250 g zucchini
- 10 pieces dried tomatoes
- 200 ml chicken stock
- 200 ml coconut cream / any other
- a handful of spinach
- salt, pepper, olive oil,
Instructions:
Clean the fillets and cut them lengthwise into 2 thinner fillets and then in half.
Season the whole meat with salt, pepper, oregano and curry seasoning and rub with grated garlic.
The meat can be gently fried in a pan with olive oil for 3 minutes on each side / or in the oven. Remove the chicken from the pan and set aside on a plate.
Put the zucchini cut into small pieces into the same pan and fry, stirring, for about 3 minutes. Add the chopped dried tomatoes and fry together for 1 minute.
Pour the broth into the pot, add the previously prepared chicken and zucchini. Cook for about 1 minute – turn the meat over every now and then.
Pour in the coconut cream / or regular cream and bring to a boil. Add the spinach and cook, stirring gently, for about 1 – 2 minutes until the sauce thickens.
