In this context, a quick summer lunch is the perfect solution for those who appreciate tasty and nutritious meals but don’t have hours to spend in the kitchen. Today, I will share some ideas for a simple, light, and satisfying lunch that can be prepared in 10 minutes.
Ingredients:
- 2 courgettes (600g)
- 2 onions
- 2 cloves of garlic
- 250 g flour
- 1 bunch cherry tomatoes (halved)
- 100 g almond protein
- 1 teaspoon Italian herbs
- Salt pepper
- 2 tbsp oil for baking
Instructions:
Grate zucchini, cut onions, press garlic
Put everything in a large bowl & stir in the remaining ingredients
Spread the dough on a baking sheet, drizzle with oil & cook for 60 min (190 degrees / fan oven)
Let cool completely and enjoy!
