Hamburger Soup with Quinoa

Ingredients:

  • 1 pound lean ground beef
  • 1 medium onion chopped finely
  • 2 sticks celery chopped finely
  • 2 tablespoons flour
  • 4 cloves garlic minced
  • 4 cups beef broth
  • 1 can crushed tomatoes
  • 1/2 teaspoon Italian seasoning
  • 1 cup coconut cream (any other)
  • 2 cups fresh baby spinach
  • Salt & pepper to taste
  • 100g Quinoa

Instructions:

In a heated pan with ghee, brown the ground beef. In the pan with ghee, brown the onion and celery, then add the garlic and cook for about a minute, stirring constantly.

Slowly add the beef stock and stir,
Add the crushed tomatoes and Italian seasoning to the pot, and add the ground beef. Increase the heat to high and bring the soup to a gentle boil.

When it begins to gently boil, add the coconut cream. Reduce the heat if necessary and simmer for about 12 minutes. Add quinoa

If the soup thickens too much, add a little more beef stock or water.

Stir in the spinach and season generously with salt and pepper.
