Easy Chicken Stew

Easy Chicken Stew is the simplest and most delicious comfort soup, perfect for chilly days! As the crisp autumn air settles in and winter quickly approaches, there’s nothing better than a hearty bowl of this stew to warm you up. Tender chicken, flavorful vegetables, and a rich, savory broth come together in a dish that’s as easy to make as it is satisfying. Whether you’re looking for a cozy weeknight meal or something to fight off the winter chill, this stew will quickly become a family favorite.

Ingredients:

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 medium onion chopped
  • 2 sticks celery chopped
  • 3 medium carrots peeled & sliced ​​
  • 3 cloves garlic minced
  • 3 cups chicken broth/stock
  • 1/2 cup coconut cream / or any other
  • 1/2 teaspoon Italian seasoning
  • 200g mushrooms (use white or cremini) sliced
  • ​​2 large Russet potatoes peeled & diced
  • 2 uncooked chicken breasts
  • Salt & pepper to taste

Instructions:

Add butter, onion, celery, carrots and garlic to the pot and cook over medium-high heat for 5-7 minutes.

Add chicken stock, then cream, Italian seasoning, mushrooms, potatoes and chicken.

Increase heat to high and bring stew to a gentle boil. Reduce heat to medium-low and simmer with lid slightly ajar for 25 minutes. You may want to stir a few times to make sure nothing is sticking to the bottom of the pot while it cooks.

Remove chicken from pot and slice. Add it back, then season stew with salt and pepper to taste and serve, sprinkled with parsley or cilantro.
