Cod Fish in papillote with Vegetables and Blue Cheese.

Here’s a simple, light, and incredibly tasty recipe for cod en papillote with vegetables and blue cheese that will delight not only seafood lovers but also anyone who values a healthy, balanced diet. Cod, rich in valuable omega-3 fatty acids, pairs perfectly with crisp vegetables and the bold flavor of blue cheese, creating a dish full of aromas and nutritional goodness. Ideal for a quick lunch or an elegant dinner, cooking en papillote ensures that the fish remains juicy and tender, while all the ingredients meld into a harmonious whole. Give it a try!
Ingredients:
  • 220 g cod fillet (wild)
  • salt, pepper
  • 2 tablespoons extra virgin olive oil
  • 80 g blue cheese
  • 1 peeled zucchini (optionally peeled)
  • 1 smaller leek
  • 1 small carrot (peeled)
  • 100 g cherry tomatoes (I used large ones from the garden, peeled)
  • fresh basil, parsley
  • 2 sheets of baking paper

Instructions:

Rinse the cod, pat dry, divide into 2 portions, season with salt and pepper, brush with olive oil and set aside.
Dice the courgette. Wash the white part of the leek, cut in half, then into half-slices. Peel the carrot and cut into strips. Season the vegetables with salt and pepper and mix.
Put the vegetables in the middle of the baking paper, place the cod with olive oil on them. Place slices of blue cheese on the fish. Sprinkle everything with halved cherry tomatoes.

Wrap the papillotes tightly and place in a large, heated pan. Cook uncovered over medium heat for 10 minutes.
