Chicken rolls with spinach and feta cheese

Ingredients:

  • 4 chicken breasts (good quality free range)
  • 1 teaspoon olive oil1 red onion (finely chopped)
  • 2 cloves garlic
  • 2 cups fresh spinach (organic)1/2 cup crumbled feta cheese (I used lactose free)
  • 1/4 sun-dried tomatoes (chopped)
  • salt, pepper, fresh basil,
  • toothpicks
  • tomato passata (I use home-made)

Instructions:

Preheat the oven to 190. In a frying pan with olive oil, fry the red onion and garlic until it starts to glaze.

Add the chopped spinach and simmer for about 4 minutes – set aside.

In a bowl, mix the spinach, feta cheese, dried tomatoes and fresh basil. Season with salt and pepper.

Beat each chicken breast to an even thickness. Spread the filling on the chicken breast and roll it up tightly – insert toothpicks. Pour a few spoonfuls of tomato puree with tomato passata onto the bottom of the baking dish, place the rolls on them and place in the oven for 25-30 minutes (check because every oven is different).

Serve with your favorite sauce and green salad
