Cauliflower Steak with Pesto / Keto, Low-Carb, Vegan

There is already a recipe for Cauliflower Steak, but in the Roasted Version. This recipe is completely different.

When it gets warm, we don’t feel like eating too heavy foods. That’s why I have a great idea for a quick, interesting, colorful and light dinner for everyone: Cauliflower Steak with Pesto.

You can enrich it with whatever you want. Sometimes I like to add an egg or simply grilled turkey.

Ingredients:

  • Cauliflower Organic, (organic ones are smaller, so I recommend using 2 and using the rest to make rice or cutlets)
  • 6 dried tomatoes, preferably in olive oil
  • herbal salt
  • smoked paprika
  • olive oil
  • sweet pepper
  • salt, pepper

Pesto recipe

  • A bunch of wild garlic.
  • 5 pieces of parmesan (check and add another piece if necessary)
  • 2 tablespoons sunflower seeds (you can use more)
  • Olive oil (here you have to adjust the amount yourself, depending on the consistency you like)
    salt

Just mix washed and dried wild garlic leaves with parmesan, roasted sunflower seeds, olive oil and salt.

Instructions:

Mix tomatoes, salt, sweet pepper, smoked pepper and olive oil together. Cut the cauliflower into slices (2-3 cm) and spread with the marinade.
Place in an ovenproof dish and bake at 200°C for about 15 minutes.

After this time, place mozzarella, cherry tomatoes mixed with wild garlic pesto on the baked slices and sprinkle with parmesan.

Bake for about 10 minutes.
