Zucchini Brownies – Keto / Low Carb

Brownies are the perfect cake that even if you don’t know how/do not like baking, it will always turn out well. And the most important thing is mega chocolate. The essence of this sweet cookie. It tastes delicious warm with ice cream, but in fact it always tastes good because it is chocolatey, moist and delicious. I have a great recipe for you with an unusual ingredient – zucchini – my favorite vegetable. I INVITE

 

Ingredients:

  • 1 egg
  • 125 g Zucchini – finely grated, drained from their juice in a clean towel, (about 2 large zucchinis, skin on, end trimmed)
  • 130 g Peanut Butter (Unsalted) – runny, no added sugar
  • 1 teaspoon Vanilla
  • 80 g of honey – or other sweetener
  • 45 g Unsweetened Cocoa
  • 55 g Almond Flour
  • ½ teaspoon Baking Soda
  • ½ teaspoon Salt
  • 2 tablespoons Coconut Oil – unrefined

Instructions:

Preheat the oven to 180°C. Line a 9 x 5-inch baking pan with parchment paper. Put aside.

Finely grate 2 large zucchinis, with skin and ends trimmed, using a finer grater on a hand grater. Drain thoroughly from water.

To the same bowl, add liquid peanut butter, egg, vanilla and honey.
Mix the ingredients together until they are consistent.
Mix unsweetened cocoa, baking soda, salt and melted coconut oil, making sure no lumps remain.

Now mix in the almond flour. The dough should be thick and difficult to mix.
Transfer the brownie batter to the prepared baking pan.
Bake for 30 minutes or until the top and sides are hardened and crispy and a skewer inserted into the center of the brownie comes out clean or with only a few crumbs remaining. Remember that if you use a wider pan, your brownies will bake faster. On the other hand, a smaller pan will take longer to bake.

Remove the tin from the oven and cool in the tin for 12 minutes.
Use a knife to loosen the sides of the cookies in the pan, then use pieces of parchment paper to lift the cookie from the pan onto a cooling rack.
Then cool for 30 minutes to make it easier to cut and to make the cake even fluffier, put it in the fridge for 30 minutes! I know it sounds out of left field, but it will make the brownie perfect, you can cut it without breaking it, and the fluffy texture will be enhanced.

Pour melted dark chocolate and sprinkle chops with dark chocolate / you can also use any other chocolate – milk.
