Soufflé with fruit sauce

Hi!

Staying on the topic of cheesecakes, I invite you to a small dessert portion.

A quick version for busy people, especially if our taste buds are craving a really good sweet flavor.

Soufflé is a truly great alternative for a quick treat, and it always tastes amazing. I’m leaving you with a fantastic and quick recipe

Ingredients for 4 servings:

• 250g of full-fat cottage cheese / feel free to substitute with another type if you prefer
• 2 eggs
• 1 tablespoon of almond flour
• 5 teaspoons of erythritol or any other sweetener
• zest of 1 lemon
• 1 teaspoon of lemon juice
• 50g of coconut yogurt
• a pinch of salt
• 60-70g of strawberries / raspberries
• Butter

 

Instructions:

Place the fruits with 1 tablespoon of sugar and 1 teaspoon of lemon juice in a saucepan. Cook for about 20 minutes over low heat.

Blend the cottage cheese with egg yolks, almond flour, yogurt, and lemon zest (it is recommended to blend the cottage cheese first until smooth and then add the remaining ingredients and blend again).

Whisk the egg whites with sugar and a pinch of salt. Add the beaten egg whites to the cottage cheese mixture and gently mix.

Grease round molds with a diameter of 10 cm with butter and pour in the mixture.

Bake at 180˚C for 22-25 minutes. Serve with strawberry sauce.
