No-Bake Chocolate Peanut Butter Oatmeal Bars

October 1st is the perfect time to introduce the true flavors of autumn into our kitchens! Today, I’m thrilled to share a delightful recipe for No-Bake Chocolate Peanut Butter Oatmeal Bars—a sweet treat that captures the essence of the season without the need for an oven.

These bars are a fantastic combination of rich chocolate and creamy peanut butter, balanced perfectly with hearty oats. Not only are they incredibly easy to make, but they also require minimal ingredients and no baking—ideal for those who want a delicious snack without the hassle.

Whether you’re preparing for a cozy night in, looking for a quick energy boost, or seeking a crowd-pleasing dessert for your next gathering, these bars are sure to impress. Grab your favorite mug of hot cocoa and get ready to enjoy a no-bake treat that embodies the spirit of fall!

Ingredients:
  • 80ml coconut oil – liquid
  • 80ml honey
  • 25g coconut sugar or xylitol
  • ¼ teaspoon sea salt
  • 223g instant oat flakes
  • 5ml vanilla extract

Chocolate layer

  • 180g dark chocolate 80% / LF
  • 180ml peanut butter – no added sugar or palm oil

Instructions:

Line an 8 x 8-inch square baking pan with parchment paper. Lightly grease the paper with coconut oil. Set aside.

Oatmeal Mixture
In a large, nonstick saucepan, add the coconut oil, honey, and coconut sugar. Heat over medium-high heat, stirring constantly. Cook until it gently boils and the sugar is completely dissolved.

Remove from heat and add vanilla extract. Stir and cook for another minute or until well combined.

In a large mixing bowl or the bowl of a stand mixer, add the oats and salt, then pour the warm, liquid mixture over the top.

Using the paddle attachment or silicone spatula, mix the ingredients together until a sticky oatmeal mixture forms.
Press about half of the mixture into the prepared baking dish, or a little more, depending on how thick you want your bar. But reserve at least 1/2 cup of the oatmeal mixture for the top of the bar for the end. Place the pan in the fridge while you prepare the chocolate-nut layer.
Chocolate filling
In a non-stick saucepan over low to medium heat, melt the chocolate and peanut butter until smooth.
Remove the pan from the fridge and pour the warm chocolate-nut butter mixture into the pan. Spread evenly with a silicone tool. Then sprinkle the remaining oat mixture over the entire bar.

Refrigerate overnight
Place the chocolate-oatmeal bar in the fridge overnight to harden.
The next day, cut into 16 squares.
Storage

**Store leftovers in an airtight container in the fridge for up to 5 days, or freeze for up to 1 month in ziplock bags.
