Ingredients:
- 130ml heavy whipping cream
- 150g mascarpone cheese
- 50ml plant-based milk or regular milk
- 2g guar gum or vegan gelatin
- 20g erythritol or other sweetener
- 4 crushed vegan biscuits/cookies (use your preferred type)
- 90g raspberries
- 180g sugar-free white chocolate (or any other type you prefer)
- 1 teaspoon coconut oil
Instructions:
First, prepare the jam by heating the raspberries in the microwave. If desired, you can add a sweetener. Mash them thoroughly and strain the mixture to remove the seeds. Mix the remaining ingredients and sweeten according to your preference. Spread the mixture over a biscuit crust, and top it with the raspberry jam. Place it in the freezer for a minimum of 6 hours, or leave it overnight. Melt the white chocolate with coconut oil in 30-second intervals.
Decorate with your choice of toppings.
