Lemon Muffins with White Chocolate

Today I have the pleasure of sharing with you a brand new muffin recipe. After the recent success of the Chocolate-Orange Muffins, I decided to create another delightful proposition that will captivate your taste buds. This time, I’ve prepared Lemon Muffins with White Chocolate, which are a true poetry in terms of flavor and appearance.

Believe me when I say that the perfect combination of the delicate aroma of lemon and the sweetness of white chocolate creates unforgettable culinary sensations. Additionally, the unique cream and crumble topping give these muffins a distinctive texture, making each bite a pure delight for the senses.

Do not hesitate any longer and make sure to try this extraordinary flavor.

Ingredients: recipe for 6 portions

  • 2 eggs
  • 100g of erythritol / or other sweetener
  • Lemon extrat
  • 2 tbsp lemon juice + lemon zest
  • 100 ml of unrefined oil
  • 100g plain yogurt (I use coconut)
  • A pinch of salt
  • 150g of almond flour
  • 1 tbsp of baking powder (8g)
  • 140g of white chocolate as you like / without sugar

 

 

Instructions:

In a bowl, mix eggs and sugar. Then add oil, yogurt extract, flour and baking soda, mix everything until smooth. Add chopped chocolate as desired, lemon zest and 2 tbsp juice and lemon extract. mix and pour into molds. Sprinkle the top of the cake with white chocolate. Bake at 180 degrees for 15 minutes.
Decorate with cream, crumble and tiny homemade chocolates
