Fluffy Pumpkin Pancakes 

Season of pumpkins, so I’ve prepared a delicious recipe for fluffy pumpkin pancakes—perfect for a cozy fall afternoon snack. Their delicate sweetness and aromatic spices like cinnamon and nutmeg make them a must-have during cooler days. You can serve them with yogurt, honey, or even a drizzle of maple syrup. These pancakes will warm you up from the inside and bring a true autumn vibe to your home. Let’s get cooking together!
Ingredients:
  • 200g finely grated pumpkin
  • 100g almond/natural yogurt
  • 2 small eggs
  • 3 tablespoons xylitol sugar
  • 150g almond flour
  • 2 teaspoons baking powder
  • ghee butter
  • additives such as sweetener, jam (my own from a recipe is best), honey, melted chocolate (any)

Instructions:

Before grating, peel the pumpkin and remove the seeds. (You can also buy it ready-made, but check the ingredients carefully.) Grate it on a fine grater, place in a bowl.
Add almond yogurt, other yogurt will do, eggs and any sweetener and mix thoroughly.
Pour almond flour and baking powder into another bowl, mix and combine the contents of the two bowls, stirring gently and briefly.
Heat a pancake pan (or one with a Teflon coating) and grease it with ghee butter (it will give a beautiful taste and smell wonderful like candy).
Pour 2 tablespoons of dough onto 1 pancake, leaving some space between them. Level the surface with a spoon.
Fry the pancakes on a moderate heat until they rise and are nicely browned (about 2 minutes). Then turn them over and fry until browned for another 2 minutes.
Before frying the next batch, clean the pan with a paper towel and grease it. Serve with whatever you like.
