Cheesecake is a classic dessert that always enjoys great popularity. However, we don’t always have the time or inclination to bake. That’s why today I have something special for you – a Classic Mini Cheesecakes & Cherry Mousse
no-bake Cheesecake in a glass! It’s a quick and simple alternative to traditional cheesecake, which will delight you with its creamy texture and exceptional taste. Perfect for summer days when we don’t want to heat up the kitchen, but also for elegant parties where each glass looks like a small work of art. I invite you to try this delicious and impressive dessert, which will surely become one of your favorites!
Ingredients:
*Ingredients for 6 servings (depending on the size of the cups and the portions you will give between layers)
- package of cookies (I use gluten-free, sugar-free)
- 200g soft cheese (I use lactose-free)
- 50g Greek yogurt (I use lactose-free)
- half a cup of double cream (I use lactose free)
- Vanilla (sugar-free)
- 10-20 g xylitol powder/or any powdered sugar
- 100g frozen cherries
- 10g peanut butter
- frozen forest fruits (for decoration)
- 1.5 teaspoon of gelatin
Instructions:
In a pot, combine the frozen cherries, 1 tablespoon of vanilla extract and a teaspoon of any sugar. Bring to a slow boil until the fruit is soft, then add the gelatin and mix well, crush the fruit and pour into a bowl to cool.
In a bowl, combine soft cheese, yoghurt, sweetener and vanilla extract. Whip the cream to 3/4 and combine the cheese mass.
Combine the cookies with 1 tablespoon of peanut butter (the peanut butter should be liquid, if it is not, warm it in a bowl of hot water).
Pour the cheese mixture into jars/cups, pour the cheese jam into the jars/cups, add the cheese mixture again and sprinkle with the cookies (do not combine the cookies on different parts of the dessert with peanut butter), put the frozen forest fruits on top and serve.
