Butter Cookies , Gluten-Free 

Today, I’m sharing a recipe for Gluten-Free Butter Cookies with a delightful hint of coconut! These light and crispy cookies are perfect for anyone who loves simple yet unique flavors. Made with gluten-free flour, they’re ideal for those avoiding gluten, while the addition of shredded coconut brings a wonderful aroma and an exotic twist. These cookies are perfect for a sweet treat with your coffee or for special occasions. They’re quick to make and impossible to resist – give them a try

 

Ingredients:

  • 100g coconut flour,
  • 50g butter,
  • 50g Xylitol sugar / or any
  • 1 egg,
  • 1 egg yolk,
  • 1/2 teaspoon vanilla extract – no add

Instructions:

In a bowl, beat the egg and egg yolk with sugar until fluffy and double in volume. Add vanilla extract and soft butter and combine with the egg mixture. Add coconut flour and mix very thoroughly but carefully, evenly with a wooden spoon, silicone spatula or your hand.

Shape the dough into any shape, such as balls, and place on baking paper. Place in an oven preheated to 180 degrees and bake for about 20 minutes, checking if they are golden brown.
