Vegan Quinoa Broccoli Tots
These vegan quinoa broccoli tots are a healthy, delicious, and crispy snack that works great as a side dish, a light lunch, or just something to munch on. They’re packed with nutrients, rich in protein and fiber, and have a soft, fluffy texture inside with a golden, crunchy exterior. Serve them with your favorite dipping sauce and enjoy a tasty, plant-based alternative to classic nuggets!
INGREDIENTS
- 1 whole broccoli
- 2 eggs / (you can substitute 2 tablespoons flaxseed meal + 6 tablespoons water)
- 2 tablespoons quinoa flour
- 2 tablespoons ground millet flakes – organic
- 1 teaspoon garlic powder
- 1 teaspoon miso paste – organic
- 1 – 2 tablespoons hummus (my homemade hummus)
PREPARATION
Steam the broccoli for about 5 minutes. Finely chop the cooled broccoli. Transfer to a large bowl and combine the remaining ingredients. Mix everything together until a dough forms. If the mixture seems a little dry, add a second spoonful of hummus.
Line a baking sheet with parchment paper and shape the dough into small balls or oblong rectangles. Chill in the fridge for at least 30 minutes for better consistency.
Bake for 18–20 minutes at 200°C – flipping halfway through baking.
Leave to cool for 10–15 minutes before transferring to a plate and serving.
Serve with your favourite sauce (I recommend my homemade ones, they work great here)
