Healthy Cinnamon Apple Banana Bread
Healthy cinnamon apple banana bread is a moist, flavorful bake with no refined sugar. The natural sweetness of bananas and apples means you don’t need much added sweetener, while cinnamon gives it a warm, spiced flavor. INGREDIENTS
- 1 1/2 cups almond flour
- 1/2 cup quinoa flour
- 1/4 cup flaxseed meal
- 2 tablespoons Erythritol
- 2 tablespoon coconut flour
- 2 teaspoons cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3 large eggs
- 1/2 cup mashed banana about 1 medium
- 1 tablespoon olive oil
- 3 tablespoons stevia or honey
- 1 tablespoon apple cider vinegar
- 1 teaspoon vanilla extract
- 1 cup shredded apple
- 1/2 cup chopped pecans
PREPARATION
Preheat the oven to 175°C. Line a loaf pan with parchment paper and set aside.
Add the dry ingredients to the bowl and whisk to combine. In a separate bowl, beat together the eggs, mashed banana, Olive oil, Erythritol, vinegar and vanilla and beat until smooth.
Pour the wet ingredients into the dry and fold together. Once combined, fold in the apple and pecans.
Transfer batter to the prepared loaf tin, sprinkle with additional chopped pecans and turbinado Erythritol (if using). Bake on the center rack for 45 – 50 minutes until the top has turned golden brown and a cake tester inserted into the center comes out clean.
Cool in the pan for 1 hour then transfer to a wire rack and cool completely before slicing.
