Carrot Cake Smoothie (No Banana)
Who says you can’t enjoy dessert for breakfast? This Carrot Cake Smoothie brings all the cozy, spiced flavors of the classic dessert into a healthy and satisfying drink – and the best part? No bananas required!
With the natural sweetness of carrots, a touch of cinnamon, and creamy ingredients like almond milk or coconut cream, this smoothie tastes indulgent while being packed with vitamins, fiber, and healthy fats. It’s perfect for mornings when you’re craving something a little different, or as a nutritious snack to brighten your day.
Ingredients:
- 350 ml almond milk – (my homemade almond milk)
- 200 g large carrots – peeled and chopped
- 1 apple
- 1 orange – peeled
- 2 pitted Medjool dates
- 40 g cashews – raw, unsalted
- 1 teaspoon ground cinnamon
Instructions:
Add the almond milk to a high-speed blender. Then add the carrot chunks, apple, orange, cashews ,date, cinnamon, and nutmeg and blend until smooth.This recipe makes a creamy, thick smoothie. Add more milk if you like your smoothie thinner.
Taste to check the level of spices, and add more cinnamon and nutmeg if needed.
Serve topped with coconut flakes and walnuts.
