Crockpot Mexican Chicken Soup
When you’re craving something cozy, packed with flavor, and incredibly easy to make, Crockpot Mexican Chicken Soup is the perfect choice! Thanks to the magic of the slow cooker, this recipe requires minimal effort – just toss in the ingredients, and let the crockpot do the rest. After a few hours, you’ll have a steaming bowl of soup filled with tender chicken, tomatoes, corn, spices, and a touch of heat. - 1 can crushed or diced tomatoes with juices
- 4 cups chicken broth
- 1 can black beans drained & rinsed
- 1 can corn drained
- 1/2 medium onion chopped
- 4 sticks celery chopped
- 2 large carrots peeled & sliced
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- 1/2 tablespoon chili powder
- Cayenne pepper to taste (optional)
- 3-4 chicken breasts (boneless, skinless)
To serve:
- Salt & pepper to taste
- Handful fresh cilantro chopped
- Juice of 1/2 lime
Garnish (optional):
- Crushed tortilla chips GF
- Greek coconut (natural yogurt or sour cream)
- Sliced jalapenos
- Avocado slices
- Lime wedges
Instructions:
Prepare onion, celery, and carrot.
Add all of the soup ingredients, except salt and pepper, cilantro, and lime juice, to your slow cooker. Mix everything well before adding the chicken breasts. Simmer for 6-8 hours.
Once the soup is cooked, shred the chicken with 2 forks and add the cilantro and lime juice. Season with salt and pepper, if desired.
Garnish the soup with any/all of the suggested toppings. Serve immediately.
Notes
- Chicken breasts can dry out, so if you’re planning on cooking it for the full 8 hours, you may want to swap with boneless skinless chicken thighs as they hold up better to slow cooking.
- This recipe is quite salty, so be sure to use unsalted butter and taste before adding any extra salt.
Add the chicken breasts to your slow cooker. Pour in the pepperoncini juice and then add the peppers on/around the chicken. Sprinkle the chicken with the seasoning, and then place the butter on top. Cover and cook for 3-4 hours on high or 6-8 hours on low.
