Colorful Spaghetti

Ingredients:

  • 500g minced meat (I used turkey)
  • 2 medium zucchinis
  • 2 medium carrots
  • 2 large tomatoes
  • Chedar cheese
  • green sprouts
  • 1 medium red onion
  • Tomato passata (I used homemade)
  • Salt, black pepper, turmeric, red pepper powder, fresh basil/dried
  • Olive oil

Instructions:

Dice the onions and fry them gently in olive oil. Season the minced meat and fry them gently in olive oil, combine with the onion, add the passata and fresh basil. Stew on low heat for 10-15 minutes

Wash the courgettes and carrots – peel them (if you want). Then, using a vegetable peeler, make spaghetti with the courgettes and carrots – you can use a regular potato peeler.

Fry the diced tomatoes in olive oil with fresh basil – but be careful not to fall apart – set aside

On the same pan, gently fry the courgettes and carrots in olive oil, season with salt – they must be soft.

Place the zucchini and carrot spaghetti in a bowl, top with the roasted tomatoes and minced meat sauce, then cover everything with cheese and sprouts.
