Soft Apple Cake

Ingredients:
- 250g soft butter
- 150g xylitol/any other
- 5 eggs (at room temperature!)
- 230g almond flour – or regular flour / GF
- 2 teaspoons baking powder
- 3 larger apples – peeled
- a pinch of cinnamon
- a few drops of lemon juice and peel
Instructions:
Take the ingredients out of the fridge at least 2 hours in advance.
Preheat the oven to 180 degrees (top and bottom heating, no fan).
Mix the soft butter at high speed for about a minute. After this time, add any sweetener you like and mix for about 2-3 minutes.After this time, add one egg at a time.The dough may look like it has curdled, but that’s how it should be.
Add the sifted flour (you can use regular flour, add 1 teaspoon of powder) and baking powder.
Mix just until the ingredients are combined.
Transfer the dough to a baking tray – mine is 24 cmPeel the three larger apples and cut them into quarters. Then cut them into smaller slices. Transfer to a bowl, sprinkle with a pinch of cinnamon and pour a little lemon juice with zest.
Arrange the apples evenly on the dough, pressing them down lightly.Bake for 40-45 minutes in an oven preheated to 180 degrees (top and bottom heat, no fan, middle shelf).
Cool and serve
