Cake with Seasonal Fruits & Mousse/ No Baking / lactose-free , Gluten free

The fresh fruit season has begun deliciously. Cake based on fresh fruit tastes best, the simpler it is and the fewer ingredients it has, the better the taste of the cake. I invite you for a delicious fruit cake based on fresh, delicious fruit with the perfect frosting that breaks the taste of sweetness and gives real wow tastes

INGREDIENTS FOR THE BASE :

  • 150-200 g of almond flour
  • 6 large dates, previously soaked
  • a handful of raisins
  • A handful of pecans

Cream:

Blueberry frużelina:

  • 200 g of blueberries
  •  2g of gelatin + 2 tablespoons of water
  • vanilla extract without sugar
  • optional a spoon of honey/xylitol another sweetener
  • a teaspoon of lime juice

Instructions:

Blend the dates with a blender and combine them with almond flour, melted butter, raisins and chopped nuts, put them in a cake tin and cool them in the fridge.

Mix the raspberries. Whip the cream and mascarpone, add powdered sugar and raspberries and mix gently. Place on the bottom and cool.

Pour cold water over gelatin and set aside.
Over low heat, heat the blueberries with vanilla extract in a pot (optional: a spoonful of honey/sugar). Once they dissolve, remove them from the burner and add the gelatin – stir until dissolved, cool until the mixture thickens.
Place the cooled layer on top of the cream. Let’s cool it down.

Decorate with fruit.

**If you don’t have time, you can put the cream in the freezer for 30 minutes and continue the rest of the process.
