Ice Cream Yogurt Berry Donuts / lactose free / dairy free

Hi!

Flavor combinations and shapes of ice cream are a big hit these days, offering plenty of fun and endless possibilities. Recently, I made Mango Ice Cream (here) with coconut cream, and let me tell you, it’s probably my best and favorite ice cream—you have to try it! It’s the best and super simple with just three ingredients.

But back to today’s recipe, we’re making Ice Cream Yogurt Berry Donuts —light, fruity, and naturally sweet. Like all my other recipes, these are low-calorie and lactose-free, but you can easily use regular yogurt if you prefer.

You know you can always modify the recipes to suit your taste.

 

Ingredients:

  • 300g lactose-free natural yogurt / Greek yogurt
  • 100g coconut cream
  • 2 tablespoons frozen raspberries
  • 3 tablespoons frozen blueberries
  • 1 tablespoon chia seeds
  • 6 large dates, previously soaked / honey
  • dried raspberries and blueberries
  • dark chocolate dairy free at least 80% / or regular dark chocolate (if you prefer milk chocolate, use it) , (I used 90%)

Instructions:

In a bowl, combine the yogurt, coconut cream, previously soaked dates, 1 tablespoon of frozen blueberries, and 1 tablespoon of frozen raspberries. Blend everything well. Add the remaining ingredients and mix with a silicone spatula. Pour the mixture into a donut mold.

Place in the freezer for a minimum of 2-3 hours.

Add a teaspoon of unrefined coconut oil to the melted chocolate and dip the top part of the donuts in the mixture. Decorate the rest according to your taste preferences. Store in the freezer for up to 3-4 months. Before consuming, take them out for a minimum of 30 minutes or longer, depending on how long they’ve been stored in the freezer.
