Soups are definitely a perfect and quick idea for a delicious dinner. Everything in one pot and tasty and healthy. In my family home, we ate meat wrapped in cabbage and tomato rice. I decided to change the style of this dish to something faster, tastier and really interesting in taste. Little work and lots of pleasure. I called this dish A’la Gołąbek Soup.
Ingredients:
- 500g minced beef (good quality, it’s best to grind it yourself)
- 2 green peppers
- 1 red pepper
- 1 yellow
- garlic clove (optional)
- cherry tomatoes (I used a solid handful)
- 1 large red onion / or 2 small ones
- 4 medium-sized dark mushrooms
- cheedar/mocarella cheese (I use lactose-free, it’s no different)
- fresh dill
- fresh basil
- salt, pepper, red pepper powder, turmeric
- Tomato Pasata sauce (I used homemade)
- Broth/water
Instructions:
* I first roast the beef in clarified butter and then cook it in a NINJA here is the link pressure cooker and immediately have the broth, but you can do the same and put it in a pot with water for 40-1 hour. (for me it takes 20 minutes)
In the meantime, chop the celery, peppers, tomatoes, mushrooms, basil and roast everything, blanch it gently and add the Tomato Pasata sauce. Combine with meat and broth, add 2 tablespoons of cheese, chopped basil, season to taste and simmer over low heat for 10-15 minutes. Serve with cheese and dill for roses.
