Mexican dish, Enchilada

Culinary enthusiasts! Today’s blog post will be dedicated to a true masterpiece of flavors – a healthy version of the classic Mexican dish, Enchilada. If you’re ready for a journey through spicy tastes and aromas, you can’t miss this recipe!

Mexican cuisine is renowned for its intense and vibrant flavors that can send our taste buds into ecstasy. However, traditional dishes from this cuisine are often calorie-rich and not always beneficial to our health. That’s why today I have decided to present you with a healthy version of one of these delicacies.

Ingredients:

  • 500g beef meat
  • 1 red pepper
  • 1 green pepper
  • 1 red Onion
  • A small can of corn
  • 10 mushrooms
  •  1 grated zucchini
  • Tomato passata
  • Tomatoes
  • cheddar cheese
  • Salad mix
  • Radish sprouts / watercress
  • Spices – red hot pepper, smoked, turmeric, basil, steak seasoning, salt, pepper

Pancake batter

  • 6 eggs
  • salt
  • pepper
  • 2 tablespoons of cream

Mix everything together in a blender and bake pancakes by rolling them all over the pan. If you prefer, you can use ready-made tortillas, but choose a good quality one.

 

Instructions:

Cook the meat (if you have a device with the pressure cooking option, 30 minutes is enough).

In the meantime, cut all the vegetables into small cubes. Grate the zucchini and drain the water and set aside. In olive oil, gently fry the vegetables that you have cut before, pour half a glass of water and stew gently until the water evaporates. When the meat is ready, pour off the water and combine the vegetables and meat, add the passata and spices, let everything cook on a very gentle fire for 10 minutes.

Place the tomatoes in the tomato sauce at the bottom of the baking dish.
For a cake or tortillas, put the meat mixture on the zucchini and cheddar cheese and fold it into a dish and put it close to each other.

Pour tomatoes in tomato sauce or tomato paste on top and sprinkle with cheese.
Bake in the oven at 180 degrees until the cheese melts.

You can prepare the food in advance, but remember that the heating time will be longer.
