Mini No-Bake Cheesecake are the perfect alternative for those seeking healthier snacks. Their recipe is based on sugar-free and gluten-free ingredients, making them suitable for people with various dietary restrictions. They are also incredibly easy and quick to prepare, making them ideal for any occasion, from family gatherings to parties with friends.
Ingredients:
- 150g almond flour / or vegan sponge biscuits
- 60g unsalted butter, melted
- 52g powdered erythritol / or other sweetener
- 250g double cream – cold
- 350g cream cheese
- 100g sugar-free and lactose-free milk chocolate / or Kinder chocolate melted & cooled slightly
- 100g powdered erythritol / or other sweetener
Instructions:
Combine almond flour, erythritol (or another sweetener), and melted butter. Mix everything together, transfer to molds, and let it sit for 30 minutes.
In another bowl, beat double cream until stiff peaks form and set aside. In a separate bowl, combine cream cheese with sugar. Then, combine both mixtures and add melted chocolate or Kinder chocolate, gently mixing. Transfer the mixture to molds with the prepared base and chill for 60 minutes.
Decorate with your favorite cream and melted chocolate or other preferred toppings.
